Paul Roberts is the winemaker and co-proprietor, with his wife Nadine, of Deep Creek Cellars in Maryland. For 20 years, the couple has turned out artisan wines at their boutique facility near the state’s second-largest tourism destination — Deep Creek Lake — from grapes grown at their high-elevation estate vineyard in the Appalachian Mountains, and elsewhere in Maryland.
They’ve focused on sleek, mineral-driven Pinot Gris and Pinot Blanc blends from a nearby vineyard they helped to develop over the last decade, as well as Pinot Noir and Cabernet Franc-based reds.
Paul has long considered Grand Cru Alsatian whites as his model. “The sensational, soft texture and firm acidity from the noble Pinots set Alsatian wines apart,” Paul comments. For me, most New World whites from these varieties fall short of Alsace’s pure flavors and sinewy complexity. Yet, such wines are wildly underrated in America. “While I strive to emulate them, I try to put our terroir’s unique stamp on every vintage.”
Deep Creek employs natural winemaking techniques: minimized vineyard inputs, native yeast sur lie fermentations, absolutely no filtering, and zero or low-sulfites in finished wines. “One can taste the winemaker’s hand and heart in our wines,” says Paul, advising that, “Unfiltered white wines in America are very rare, yet we’ve been doing them for two decades.”
Before planting their vines and opening in 1997, Paul and Nadine had careers in the museum profession. Opening his own winery was the culmination of a dream for Paul, planned long ago after an apprenticeship preparing the 1986 vintage at historic Chateau Montelena in Napa Valley. Deep Creek Cellars is the end result of a goal set years ago.
